Refridgerator Bran Muffins

Mix and let stand:
2 cups boiling water
2 cups bran flakes

Mix as  usual:
1 cup vegetable oil
1 litre/qt buttermilk
2 1/2 cups sugar
4 eggs
1 tsp. salt
5 cups flour
2 cups raisins
Add bran mixture and mix well.
You can mix this up and store in fridge. Will last about 1 month.
Once refridgerated never stir. Just scoop into muffin tins lined with paper.
I find the longer it sits in the fridge the tany-er the dough gets!
Bake at 350-375F for 20 minutes

Yield: Make an icecream pail of dough!

  3. I forgot the molasses. Add 1/2 cup of Molasses to this recipe
