1 1/4 cups boiling water
1 cup quick oatmeal
Mix together and let stand. (In Bible school we used 2 cups left over porridge)
In mixing bowl cream till fluffy:
1/2 cup butter or margerine
1/2 cup white sugar
1 cup brown sugar
1 tsp vanilla
2 eggs
Add:
1 1/3 cups flour
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
1 tsp. baking soda
1 cup raisins ( optional)
spread into a greased jelly roll pan.
Bake in 350F oven for 30 minutes or until toothpick come out clean.
Frosting
1/2 cup margerine, melted
1/2 cup brown sugar
1/4 cup cream ( or milk)
1/2 cup walnut crumbs
3/4 cup shredded coconut
Spread over cake as soon as it is baked. Turn oven to broil.
Return cake to oven for 3-5 minutes till lightly brown. cool and enjoy!
