Burst O' Lemon Muffins

1 cup lemon or vanills yogart
1 egg
1/3 cup margerine, melted
1 Tbsp. lemon juice
1-2 Tbsp. grated lemon peel
1 3/4 cups flour
3/4 cup sugar
1 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt
1/2 cup coconut
Beat together the first 5 ingredients. Add dry ingredients and mix just to moisten.
Bake at 400F for 18-22minutes

Topping
Dissolve  1/4 cup sugar in 1/3 cup lemon juice
add 1/4 cup coconut
Poke holes in muffing with a toothpick.
Spoon topping.
Place back in oven of broil for a minute or till coconut is slightly toasted.
cool on a rack.

Yield: 12 muffins
