These muffins have great nutty flavor with the oatmeal, walnuts and blueberries. They are a bit crumbly but good.
1 cup oatmeal
1 cup buttermilk or sour sream
Mix together and let stand while mixing rest.
3/4 cup brown sugar
In a separate bowl mix
1 cup flour
1 tsp. baking powder
1/2 tsp baking soda
1 cup blueberries
1/2 cup walnut crumbs
In mixing bowl blend till fluffy
1 egg
3/4 cup softened margerine
3/4 cup brown sugar
add the oatmeal mixture
Add dry ingredients to the wet and mix only to get the dry mixture wet.
spoon into paper lined muffin tin.
Bake at 350F for 15-20 minutes or till done.
Yield: 12 large
