Carrot Bran Muffins

I like these because they are hearty and healthy and not too sweet.

2 eggs
1/3 cup liquid honey
1/4 cup molasses
1/4 cup veg. oil
1 1/2 cups milk
2 Tbsp lemon peel
1 tsp cinnomon
1/2 tsp nutmeg
1 1/2 tsp baking soda
1 1/2 cup whole wheat flour
1 1/2 cups baking bran
1 cup grated carrots
1/2 cup walnut crumbs
1 cup raisins
mix as usual. spoon into muffin tin lined with papers.
Bake at 350F for 25 minutes or till done.
Yield: 12-18 depending on the size you make.
