Cream Of Wheat Orange cake

This is another recipe I got at Bible School. Yes another way to use up that left over breakfast cereal! 'Course now I have to intentionally make more so I can have it for the cake! It is very moist...almost too moist for a 9X13 so make it in a jelly roll pan. Good for big group events.

3/4 cup softened margerine
1 cup sugar
3 eggs
beat together till fluffy.
 Then add:
2 cups cooked cream of wheat
juice and grated rind from 1 orange
2 tsp. baking soda
2 tsp. baking powder
2 cups flour
mix well and pour into a greased jelly roll pan. Bake at 350F for 25-30 minutes
or till toothpick comes out clean.

Icing
2 cups icing sugar
2 Tbsp. softened margerine
1 Tbsp. gated orange rind
2-3 Tbsp. orange juice
spread on cooled cake.
