I enjoy this Platz (cake) made with apricots the best but any fruit would work. I remember Gramma made it with gooseberries! I also like it cause it is quick to make and you only dirty one bowl. I mix by hand and save the beaters!
In a bowl mix in order
1 cup sugar
2 eggs
5 Tbsp. veg.oil
1 tsp. vanilla
3 tsp baking powder
2/3 - 3/4 cup milk
1 1/2 - 1 3/4 cup flour
Pour into a greased 9X13 pan
Place choped fruit of your choice on top of dough.
In same bowl :
3/4 - 1 cup cugar
3/4 - 1 cup flour
1/3 -1/2 cup cold margerine
1 tsp cinnomon (if desired...I desire!)
Blend with pastry blender or by hand.
sprinkle over fruit.
Bake at 350F for 40-50 minutes or till toothpick comes out clean.
