Soup recipes are hard to write down as I usually just make it up as I go. I was asked for this recipe, so when I made a pot this week I wrote down what I used!! It always tastes better the second day!!
2lbs ground beef (4 cups raw)
12 cups water
1 1/2 tsp salt
1/2 tsp black pepper
2 pkg beef oxo
2-3 bay leaves
12-15 pepper corns
1 tbsp. dill seed
1 bunch fresh Parsley (can also use 2-3 tbsp dry)
2 medium onoins, chopped
5 large carrots, sliced
7 medium potatoes, cubed
4 celery stalks, chopped
2 cups frozen green beans
1 cup frozen corn
1 cup frozen peas
796 ml diced tomatoes
284 ml condensed Tomato soup
Brown and drain ground beef and transfer to a large stock pot. Add water. In a spice ball add pepper corns, dill seed, parsley (if using dry). Place in pot. Add bay leaves and parsley bunch, salt and black pepper.
Add onions, carrots and potatoes. Simmer for approx.1/2 hr. Add rest of vegetables and the soup. Bring to a boil and simmer another 1/2 hr - 1 hr. Remove bay leaves, parsley bunch and soup ball. Enjoy!
Yield: approx. 20 bowls.
I have this old, green, duotang scribler full of recipes that I started collecting in my childhood when I first discovered my love of cooking. This book is now tattered with pages falling out and recipes written on scrapes of paper shoved in among the pages. It is time to rewrite the recipes so thought I would share them with you! You probably will not see picture but you can know these are tried and true recipes!!

Sweet Potato Biscuits
These are quite moist and a lovely orange color. I like them with honey butter.
1 cup flour
3 tsp. baking powder
2 tsp brown sugar
1/2 tsp salt
2 Tbsp. shortening
3/4 cup mashed sweet potato
2-3 Tbsp. milk
Mix dry ingredients in a bowl. cut in the shortening. add the potato and enough milk to make a soft dough.
roll or pat out to 1/2". cut into squares ao with a cutter. Place on greased baking sheet. Bake for 12-15 minutes at 400F.
Yield: 6-8 depending how big you make them!

Napoleon Torte
My Mom makes the best Napoleon! My friend Dorothea make a replica with saltine crackers (unsalted tops) which isn't too bad either.
Biscuit layer
1/2 cup margerine
1/2 cup sugar
1 egg
2 tsp. baking powder
approx. 2 cups flour
Cream margerine and sugar. Add egg and milk. Mix well. Add b. powder and enough flour to make a soft dough that can be easily rolled. Roll quite thin. Cut in cirles about the size of a medium sized plate. Prick with fork. Bake on greased cookie sheet at 375F till light brown (approx 10 minutes). When cool put together with the pudding.
Pudding
2 3/4 cups milk (divided)
1/2 cup flour
1 cup sugar
3 egg yolks
1/4 cup butter
1 tsp vanilla
Scald 2 cups milk. in a small bowl mix flour and sugar together. Add 3/4 cup milk. Mix well then wisk into scalded milk. Cook till thick. Remove from heat and mix in egg yolks, butter and vanilla.
Spread pudding on first biscuit layer then cover with another biscuit.Continue layers till all biscuits are used. Coat top and sides of cake with the pudding. Allow several hours for the pudding to soak into the buiscuts to soften them before serving.

Lazy Daisy Cake
I can't remember where I got this recipe but I like it. It is quite moist. I often have used it without the topping to make a flan torte (1 recipe makes 1 torte plus 4 cupcakes).
2 eggs
1 tsp. vanilla
1 cup sugar
1 cup flour
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
2 Tbsp. butter
Beat eggs with vanilla until thick and creamy. Gradually add sugar. Add flour, b. poder and salt. Heat milk and butter to boiling point. add. Pour into greased 8x8 pan.
Sprinkle with topping. Bake at 350F for 30-40 minutes
Topping
2/3 cup coconut
2 tsp. cream
5 tsp. brown sugar
4 tsp. melted butter
1/2 tsp vanilla
Mix well.

I like making waffles from scatch as apposed to using a mix. Our family likes them served with vanilla pudding, thickened fruit and whipped cream or ice cream.

1 3/4 cups buttermilk or sour milk
1/2 cup melted margerine
Mix together dry ingredients. Add egg yolks,and rest of liquids. Beat egg whites till stiff. fold into batter. Bake in waffle iron.

Roll Kuchen
These are especially good served with watermellon or borscht. Also good with corn syrup or jam.

Mix dry ingredients in a large bowl. Add liquids and eggs. Roll out on floured board. If you roll them out quite thin they will be crisp, if you prefer them softer, do dot rooll them out too thin. Cut in 2X4 inch strips. Cut a slit in the centre and pull one end through the hole. Fry in deep hot oil until golden brown on both sides.
Yield : one large tupperware bowl full.
