I like making waffles from scatch as apposed to using a mix. Our family likes them served with vanilla pudding, thickened fruit and whipped cream or ice cream.
1 1/4 cups flour
1/2 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda
2 eggs (separated)
1 3/4 cups buttermilk or sour milk
1/2 cup melted margerine
Mix together dry ingredients. Add egg yolks,and rest of liquids. Beat egg whites till stiff. fold into batter. Bake in waffle iron.
Pudding
3 cups milk
1 egg
1/2 cup flour
1/2 cup sugar
1 tsp. vanilla Scald milk. Mix flour, sugar and egg untill smooth (add a couple tsp of milk if too thick) Add to scalded milk. Stir over low heat until thick Remove from heat and add Vanilla. Serve over waffles
