Rhubarb Mous (Fruit Soup)

My Mom makes the best Rhubarb Mous every summer. It is good by itself or over ice cream.

5 cups chopped Rhubarb
1 cup water
1 3/4 cup sugar
1 pkg  red jello powder (Strawberry, Raspberry, Cherry)
1/4 cup cold water > optional
1-2 Tbsp cornstarch       "

Place Rhubarb and 1 cup water in sauce pan. Bring to a boil. Lower heat and simmer until rhubarb is soft and falling apart. Add sugar and jello. bring to a boil and simmer for a few more minutes. If mixture is too thin then I add the water/cornstarch mixture to thicken it.
Cool. Store in refrigerator.
YIELD: approx 5-6 cups
